Our family favorite breakfast : Eggs Benedict


Since i began losing weight, i have become more aware of the things added into our food. As a big fan of healthy cooking and cooking meals from scratch using natural ingredients I switched to brands such as Clover Lighter than Light, which with 80% less saturated fat than Butter and made with only natural ingredients it ticks all the boxes for my family.

As a mum, i am aware how important breakfast is. During the week, breakfast typically is a mad rush while getting ready for school or work. However on a Sunday, when i have more time to prepare a meal, i take the time to make something a little different to the usual breakfast of cereal or toast. Eggs Benedict is one meal which is a firm favorite in our house 

Here is how i make a healthier version of Eggs Benedict. 


The ingredients you will need:

For the Hollandaise sauce

White wine vinegar 

3 egg yokes

250 grams Clover lighter than light

Lemon juice

salt and pepper

Chives or other herbs (optional)


Items to make the rest of the meal

English muffins
Parma Ham

Eggs

Clover 

How to make the sauce - :


First Melt 250 grams of Clover lighter than light into a pan. Put 3 egg yolks, 1/2 tsp white wine vinegar and a pinch of salt in a metal or glass bowl that will fit over a small pan. Whisk for a few minutes then put the bowl over a pan of  simmering water and whisk continuously until  thick, This usually takes about 3-5 minutes.

My husband likes chives in his sauce so if like, you could add these in too. 


Remove from the heat and slowly whisk in the melted butter, bit by bit until it’s all incorporated and you have a creamy hollandaise. Season with a squeeze of Lemon juice and a little salt and pepper and keep warm until needed.



Now assemble the eggs benedict!




Cut muffins in half and toast to your liking. Spread with Clover Lighter than Light. 

Poach 2 eggs in boiling water try to keep the yolks runny if possible, and plate up by placing 2 muffin halves on a plate, top with folded, warm Parma Ham, the 2 poached eggs and spoon over a generous helping of Hollandaise sauce. Sprinkle over chopped herbs of your choice to taste.

Serve with Fresh Orange juice, lots of love and make sure there is plenty left over as everyone will want seconds.

The end result? Lots of empty plates and a happy family.
