Pork loin with cheesy fried potatoes

We picked up a pork loin really cheap that needed using. Im due a shop so needed to use up items in the fridge. This isn't what i would usually make but it was really yummy! There was also plenty leftover to go alongside the next days meal.

  • Pork loin - chopped or diced ( can cut into steaks if wished)
  • Onion - diced
  • Cheese - grated or cubed
  • Red pepper - diced
  • 2 tablespoons of flour 
  • Potatoes - diced. I made a really large batch using 8 medium potatoes. 
Step 1 - Prepare your potatoes, veg and pork. 

Step 2 - Par boil your potatoes until slightly cooked. Put onto a plate to cool down. 

Step 3 - In a frying pan, fry your onions and peppers and brown your meat. When cooked pour contents into an oven dish. ( To save time i actually done this in 2 pans and cooked it all at the same time - the potatoes went into the fryer)

Step 4 - Add flour to a bowl/plate and coat the potato cubes in flour. Shake off any excess and in a little oil fry them until golden brown and crispy. If you have to do this in batches do it. A fryer works well here. Do not move them about so they stay crispy. 

Step 5 - Place the potatoes on top of the pork and place the grated cheese over the top of the potatoes. The amount of cheese you use depends on your personal taste. 

Step 6 - Cook for around 10 mins until the cheese has melted then serve :)

If you want cheese and onion mash, cook the onions with the potatoes in step 3. 

The total cost for this meal was just just £2.70 for 4 people. There was plenty left over though and will make a nice side to a quiche for tomorrows dinner. Cheap easy and filling, plus used up the odd bits of veg i had in the fridge :)
