Slow cooker challenge Day 5 - Stuffed pork and Potatoes.

Not having an oven is making life difficult for me at the moment! Im getting close to my monthly shop so im running my freezer down. At the bottom of my freezer was a stuffed pork joint i brought before my cooker went bang. I didn't fancy a tomato based meal or a curry again so it went in the slow cooker! Some boiled spuds later, with some sweetcorn and a drizzle of gravy and, hey presto, the mini roast i've been dying for!

Ingredients used - serves 4, cooked in a 3.5L slow cooker

1 joint of stuffed pork
1 vegetable stock cube
Around 1/4 bag of small potatoes.


Step one : prepare the potatoes

I just quartered mine, I wanted the skin to resemble roast potatoes. Place potatoes in the bottom of the slow cooker with a little vegetable stock, covering the potatoes.

As you can see, I put a little too much stock in. It does not need to be swimming in stock, the stock is just there to stop the potatoes drying out, sticking and gives them some more flavour. 

Step two - place the meat on top of the bed of potatoes. 

If you wish to rub spices, herbs or oil into your meat, do so now. 

Step three - cook on low for 4-6 hours until the meat is cooked through and the potatoes are soft. 

Serve hot with any veggies you would like :) I chose sweet corn :)
