Slow cooker challenge - Day 1: Lasagne

Easy Slow cooker Lasagne

Firstly forgive the photo, im using a mobile and its crap! and Gareth felt the need to just plonk it on a plate :D

As I've just restarted slimming world, I've included a slimming world version so I don't need to write a seperate post.

Lasagne was cooked in a 3.5L slow cooker , cooked on low for 6-8 hours.

Ingredients: Serves 6
  • 700g beef mince
  • Lasagne sheets (personal preference how many you use)
  • Half cup diced onion
  • 1 tbs lazy garlic
  • 1 cup mixed veg
  • 1 tin tomatoes (use more for a runny sauce)
  • 2 tbs tomato purée
  • 2 tubs natural cottage cheese
  • 1 mozzarella ball
Slimming world lasagne - syn free
  • Lasagne sheets
  • Extra lean mince (not sure on size as i dont buy it)
  • Onion
  • Garlic
  • Spinach
  • Quark 1 tub
  • 1 Egg
  • 2 Tinned tomatoes
  • Splash of 1% milk
  • 45g reduced fat cheddar cheese (HEA or 6 syns)

Step one: (for both versions) Brown  the mince then add onion, garlic and any veggies. Add the 
tinned toms and tomato puree then leave to simmer for 10 mins. Can add mixed herbs or other 

Step 2: Make the white sauce 
  • Mix cottage cheese, chopped mozerella and egg in a bowel til thoroughly. 
Slimming world syn free white sauce.
  • Mix quark, egg, reduced fat cheese and milk together till creamy.
Step 3: Spray the inside of your slow cooker and Start layering your dish

I Start with red sauce first. Then lasagna sheets, red sauce, white sauce and so on. I usually round it up to 3 layers and top it off with lasagne sheets. 

Cost to make if buying from scratch:

Very budget friendly 
  • Cottage cheese - 67p Tesco
  • Mozerella ball - 44p Tesco
  • Lasagne sheets - 22p Sainsburys 
  • Tinned toms - 24p a tin own brand
  • Tom purée - 22p Tesco
  • Onion - 13p grocers
  • Mixed veg - 75p Tesco
  • Lazy garlic - price varies
  • Beef mince - £3 Tesco own
Slimming world version cost varies depending on what veg you use and where you buy the quark and  mince from. 

Using the portions for these ingredients the whole meal costs just under £4. 

This can be easily made into a veggie friendly meal by using quorn or removing the meat. 
Other flavour options Im going to try are chicken pieces and chorizo with bacon which sounds yummy :)
