Honey and lemon chicken

I love my chinese food. Its a massive treat for us having a chinese takeaway as a pizza, a chip shop dinner or a kebab is much cheaper. When i was on slimming world years ago i made this quite often as it was a very low syn, filling dinner and the ingredients were things i always had in the cupboard. Im not sure on the syn value now but when i was a member 6 years ago it was 5.5 syns a serving.

Its really simple to make, cheap and yummy!

Ingredients needed: Makes 2 servings

  • Chicken - 2 large chicken breasts (I usually dice them)
  • Honey - 2 Tablespoons
  • Lemon curd - 6 Tablespoons (adjust to your tastes)
  • Soy sauce - optional for mixing in with the rice (according to taste)
  • Lemon juice (can use an actual lemon) - 4 Tablespoons
  • Pineapple pieces (according to taste)
  • Rice (white or wholemeal is fine too, i just like the packets)
  • Water - roughly 100-125mls water
  • Other veggies- peas, mushrooms etc - optional


Step 1

Boil your rice and add a little soy sauce if wanted. Spray a pan with fry light (or oil if you want) and fry the chicken. 
*I used packet rice so skipped this step, the chicken breast i used was from chicken i cooked the night before so i didn't need to recook) 

Step 2

  • Add lemon curd, lemon juice and water into a saucepan and bring to the boil. It turns milky but thats normal and will disappear quickly. 
  • Add pineapple pieces and boil for around 10 minutes. 
Step 3
  • Add your cooked chicken pieces and keep it boiling until you see the sauce start to thicken up. 
  • Turn down the heat and add honey then simmer for 10 mins. 
  • If you want to use extra veggies. In a fry light sprayed pan - fry the mushrooms, onions etc and then mix in with the cooked rice
  • Serve your honey and lemon chicken hot poured over your rice. 

The cost to make this varies but ill put down how much i paid per item
  • Honey - 99p tesco own
  • Lemon juice - 50p on offer tescos
  • Chicken - £5 chicken i split into 3 meals
  • Pineapple pieces - 36p a tin? 
  • Rice - 25p a packet
  • Lemon curd - 22p tesco own
  • Soy sauce - 89p a bottle.
The whole meal based on what i used cost maybe around £2.20, it was definitely under £3. You could easily add more to make for more people but i found i struggled even with doubling the ingredients to make enough sauce for the 4 of us. The lemon curd can be quite over powering so personally i didn't ant to add more than i already had but its down to personal taste :D 

I think ill make some egg fried rice next time and enjoy this with some spring rolls if i can hunt down some filo pastry :D
