Chicken Noodle Soup

Not really a dinner but i was using up cupboard stuff. We had some packs of noodles and some stock cubes. I already had the sweetcorn and the chicken. Barring the cheap noodles, its a healthy meal.... what i would class as healthy anyway and including the chicken, which i divided into 2 meals, the soup cost me a grand total of £2 to make for all 4 of us. Thats 50p a person! If i went and brought everything it would still only have cost me £4.50 for all 4 of us. Bargain and perfect for Gareth to take in a flask when he goes fishing.

BTW Tesco currently have some meat on 3 for £10. I didnt go for that because i only wanted chicken and 2 medium chickens are currently 2 for £8. I split a whole chicken into 2-3 meals so this works out at around £1.50-£2 for our meat a meal.

Im really full up so it done the job and i had 4 empty bowls because the kids ate the lot with ZERO complaints! Go me!

So......

Chicken Noodle Soup - make about 5-6 portions but we used deep bowls so scraped about 4 & 1/2





These are the ingredients i used. Obviously If you use more expensive stuff or add in your own bits and prices it will cost more. These are just random bits i was using up to clear my cupboards.

Ingredients:

Chicken - no set amount here throw in as much as you fancy. I used the breast meat from a whole chicken and threw the rest into the slow cooker for a stew tomorrow.
Chicken stock cubes -  we only used 2 as it gave quite alot of flavour.
Sweetcorn- again no set amount- go wild. We used frozen but fresh works just as well (optional)
Noodles -  We used 2 packs of instant noodles and 2 packs of the straight to the wok noodles just to bulk it out. You can use less or skip the instant noodles if you want.
Seasoning to taste

Directions: 



If chicken is not cooked do this first. I precooked the chicken as it was originally a whole one.

  • Boil some water in a pan. The bigger the pan the more you will make so consider that before breaking out the big pans!
  • Put your noodles, stock cubes and sweetcorn into the pan 
  • Start shredding your chicken 
  • Add chicken to the pan and any seasoning. 
  • Keep stirring as necessary
  • Serve with some yummy prawn crackers or a crusty roll.


Easy peasy. Took all of 10 mins to cook on the hob not including the time to cook the chicken, but in small chunks your could pan fry it in no time.

And of course, here's the finished piece! I had a mahoosive bowlful and my belly actually hurts! Its surprisingly filling and wasn't as much liquid as i thought there would be because the noodles soaked it all up!

    1. I tried this with quorn tonight, it actually tasted quite nice. I dumped an extra stock cube in so the kids would eat it. Going to attempt a beef noodle soup mid week :D
